When the Spanish conquered the Aztec Empire they outlawed the cultivation of Amaranth for religious reasons and the secret of Amaranth was lost for hundreds of years. Amaranth contains essential amino acids, including two not commonly found in grains – lysine and methionine, which are “essential” as our body cannot make them and so we must get them from the food we eat. Amino acids are the building blocks of protein.

- Magnesium – necessary for normal nerve and muscle function
